The coriander fruit is a spherical, brownish or greyish-yellow two-seeded seed with a diameter of 2-5mm. The inner surface of the fruit has 2 tubules, which contain the bulk of essential oil.
The oil content of the fruit varies from 1.5% to 2.2% depending on the variety and reproduction.
During threshing, a part of the fruit splits into 2 half-fruits; in this case the tubules are damaged and a part of the oil evaporates.
